Pancreatitis menu

Pancreatitis is a disease of the pancreas, in which the cells of the organ are destroyed by its own enzymes. In the phase of exacerbation, glandular cells are destroyed, in the phase of remission, connective tissue is formed in place of dead cells. This greatly disrupts the work of the pancreas. The most common causes of pancreatitis are alcohol abuse and eating disorders, which is why treatment should begin with nutrition.

Nutritional recommendations for each patient should be selected individually, depending on the severity of the condition, phase of disease, food intolerance and concomitant diseases. The menu below for pankteatitis is suitable for the phase of remission (that is, the period when there is no exacerbation) and will help to avoid the next exacerbation.

The basic principles of the menu for pancreatitis:

  1. The purpose of the diet is to improve the work of the pancreas, reduce the load on the digestive system.
  2. Restriction of simple carbohydrates - sweets, baked goods, sugar. The sugar is partially replaced by xylitol or sorbitol. From sweets allowed - marmalade, honey, jam.
  3. The fractional diet - 5-6 times a day.
  4. Cooking - steamed, baked and boiled. It is necessary to wipe stringy meats and vegetables rich in dietary fiber (carrots, broccoli, cabbage, fresh herbs).
  5. The temperature of the dishes is normal, cold dishes are excluded.
  6. During the period of remission, the menu may include vegetable and grain soups in the diet. At the same time, the vegetables should be boiled well.
  7. You can use meat, skinless poultry, lean, boiled and baked varieties of fish. Do not use offal (liver, kidneys, brains), smoked meats, salted fish, caviar, sausages, preserves.
  8. From allowed dairy products - cottage cheese (up to 20%), milk, sour milk drinks, sour cream in dishes.

  11. Drinks - weak tea, coffee with milk, rosehip broth and fruit drinks diluted in half with water, fruit juice without sugar. Excluded - black coffee, cocoa, soft drinks.

Monday

dishes for pancreatitis on monday

Breakfast:sweet pilaf with dried fruits;

Having dinner:chicken noodle soup; baked zucchini and eggplant with cheese;

Afternoon tea:strawberry and banana milkshake;

Having dinner:baked halibut fillet.

Nutritionist comment:

In order for the sweet pilaf to be suitable for a patient with pancreatitis, exclude nuts, cranberries from it and reduce the amount of sugar to 1 tbsp.

We add vegetables to the soup without frying, it will reduce the load on the pancreas.

Hot spices should be excluded from recipes.

I recommend choosing milk for a cocktail, the fat content of which does not exceed 2. 5%, and as with coffee, it is better to exclude it from the recipe, it is not recommended to use this product with pancreatitis.

You can use any method to prepare halibut fillets, both are acceptable when sick. You can choose a side dish with cereals, for example, boiled buckwheat or vegetables - cauliflower, broccoli, potatoes, zucchini, etc. Choose a method of cooking the vegetables that does not obscure the taste of the fish or cause it to deteriorate, for example, boiling or steaming the vegetables.

For spice porridge, you can use only cinnamon, it is better to refuse ginger and nutmeg.

To make the kulesh more suitable for our menu, the vegetables should be simmered with a little water or broth. Try to choose beef without veins or bundles.

When cooking zucchini, you will have to refuse the garlic, and not to fry the vegetables, but to simmer them with a little water or broth.
